Thailand is a big country and most visitors only see a small part of it by visiting Phuket for 7 days with a day trip to Phi Phi but there are a lot of other places which are easily accessible and very tourist friendly too.
We usually try to go for 3 weeks and would not recommend that anyone go for less than 10 days. It takes a few days to acclimatise and get over the jet lag, the plane ticket there is quite expensive and once you are there you don't have to rush anything as you have more time to relax.
It is also better to stay in one region of the country as it will cut travelling costs and time. If you decide to go to Phuket then you can combine it with a few days on Koh Phi Phi , Ao Nang, Krabi or Koh Lanta. The same thing if you go to Koh Samui, combine it with Koh Phangan and Koh Tao. See the map below that shows the places mentioned that are near to each other, for instance the taxi from Krabi to Phuket is a 3 to 4 hour trip with a stop on the way.

If you are after a beach holiday then the southern region is perfect as here are all the best islands and beaches. Phuket and Koh Samui are situated here.
In the North of the country there are no beaches and it is more mountainous with trekking, visiting elephant camps and tribal villages being the main attractions. Chiang Mai is the biggest city in the region with Chiang Rai and Pai being other tourist destinations.
In the Centre of the country is Bangkok which is a shopping paradise with Pattaya being the nearest big beach destination with Koh Samet and Koh Chang being further East.
